In this recipe, the tuna is confit and enhanced with extra virgin olive oil.

To obtain a tender and tasty tuna, it is first cooked whole.

After simmering in a court-bouillon, it is then trimmed by hand to keep only the best. It is then covered with extra virgin olive oil which will blend with its flesh and make it more tender.
